Cranberry Dressed Salad

French Onion Soup

Pair this classic soup with a green salad for dinner

 

Ingredients:

6 cups onions. sliced

3 Tbsp butter

2 Tbsp olive oil

3 sprigs fresh thyme

1 quart beef broth

6 oz. Swiss cheese

6 slices French bread

salt and  pepper to taste

 

Directions:

In a heavy soup pot warm the butter and oil.

Saute onions until they soften and begin to brown. Add

thyme and stock.

 

Simmer covered for 30 minutes. Season with salt &

pepper.

 

Divide soup into oven safe bowls set on a cookie sheet.

Top each bowl with a slice of bread and an even layer of

shredded cheese.

 

Broil until cheese is melted, bubbly and browned.
