Pumpkin Spice Muffins

Autumn Harvest in your hands. Makes 1 dozen.

 

Ingredients:

6 Tbsp unsalted butter, room temperature

1 1/3 cup light brown sugar

2 eggs

1 1/3 cup pureed pumpkin (roasted or steamed)

1 tsp vanilla extract

1 3/4 cup all purpose flour

2 tsp baking powder

2 tsp pumpkin spice mix

1/2 tsp kosher salt

 

Directions:

Preheat oven to 350. Line or grease muffin tins.

In a stand mixer, cream the butter and sugar. Add

the eggs and blend in.

Add the pureed pumpkin and vanilla. Blend.

 

Add the flour, baking powder, spice mix and salt. Blend

until completely incorporated.

 

Scoop into muffin cups.

 

Bake 20 -22 minutes.
