Smoky Watermelon Gazpacho

A refreshing chilled soup with a hint of smoke and heat

 

Ingredients:

6 cups watermelon, deseeded, cut into 1 inch cubes

1 large cucumber, peeled and deseeded

5 large ripe tomatoes, quartered

1 Tbsp. sweet smoked paprika

1 clove garlic, peeled

3 Tablespoons sherry vinegar

1 chipotle in adobo sauce (optional)

Kosher salt and freshly cracked pepper to taste

 

Directions:

In a blender combine, garlic watermelon and cucumber.

Add 1/2 cup water if blending is not easy.

 

When blended add tomato, chipotle, paprika and

vinegar. Blend to a smooth consistency.

 

Taste and season with salt and pepper.

Served chilled.
