Grilled Peach Salad

Amplify peach’s sweetness with heat from grill

 

Ingredients:

4 peaches. halved & pitted

1 head red lettuce

1 Tbsp peach jam

1 Tbsp Dijon mustard

1/2 cup fresh herb mix-basil, mint, parsley, rosemary

1/4 cup rice wine vinegar

3/4 cup olive oil

Kosher salt and pepper to taste

 

Directions:

 

Brush peach halves with olive oil and sprinkle with salt.

Grill flat side down until they have grill marks and peach softens.

 

Whisk together jam, mustard, vinegar and herbs. Add

olive oil in a slow, steady stream while whisking

continuously. Season with salt and pepper.

 

Toss the lettuce with the dressing.

Top the greens with the grilled peaches.
