Crunchy Zucchini Fingers

Who needs chiken when you can have these!

 

Ingredients:

2 zucchini

2 eggs, beaten

1 cup seasoned breadcrumbs

1/2 cup grated Parmesan cheese

1/4 fresh basil, chopped

Kosher salt & black pepper to taste

 

Directions:

Preheat oven to 425 degrees F.

 

Cut the zucchini into sticks, 1/2 wide by 4 inches long

 

Dip the sticks into the beaten eggs

Put breadcrumbs, parmesan and basil in a shallow pan.

Coat the zucchini mixture.

 

Arrange sticks on a baking sheet.

 

Bake for 20-25 minutes, turning halfway through cooking.

 

Serve with tomato sauce or ranch dressing on the side.
