Strawberry Basil Cooler

This twist on lemonade is berry refreshing with herbal
notes.

 

Ingredients:

1 pint Jersey Fresh strawberries

3/4 cup granulated sugar

5 cups water, divided

1 cup basil leaves and stems

1 cup lemon juice

 

Directions:

Hull and slice the strawberries

 

In a large sauce pan, combine 1 cup water, the sugar

and strawberries. Bring to a boil and reduce to simmer

for 10 minutes.

 

Add the basil and turn off the heat. Allow to cool and

strain. Discard solids.

 

In a pitcher combine the remaining four cups of water,

lemon juice and the strawberry basil syrup.

 

Stir and serve over rice with a strawberry and basil sprig.
